Vineyard and Winemaking
For a second consecutive year Mother Nature gave us a flawless growing season allowing us to harvest our flagship Estate Cabernet in 2015. Hand harvested on October 22 at perfect ripeness, the grapes were destemmed directly to open top tanks where a long fermentation ensued. Gently punched down by hand twice daily allowed for gently extraction of flavors and aromas. Following fermentation the wine was pressed directly to new French and American oak barrels. Aged 38 months in barrel, the wine was bottled unfined and unfiltered. 115 cases produced.
Tasting Notes
Enticing, rich aromas of spice cake, caramel, and dark chocolate with complex hints of cassis, Asian spices, vanilla, and dried berries. On point to drink now, with harmonious soft tannins and an endless finish, our 2015 Estate Cabernet will age and gain complexity over the next 10 to 20 years.
